"Kung Fu" is the Mandarin form of the phrase and "gung fu" is Cantonese
(which Bruce Lee was). Karate is an offshoot of the Chinese art (perhaps
more properly called wu shu) developed in Okinawa and Japan. 

I have to say, as much fun as it is to watch Mrs Peel swing in action, I
can't spot when she switches from karate to kung fu. Most of the time
she seems to be using rather generic throws and kicks, with a lot of
inappropriate use of the hand-edge blow (the famous "karate chop") from
awkward angles and against parts of the body where little effect would
be had. 

Still, I suppose it's part of the general stylization of THE AVENGERS,
which takes place on its own terms and is not exactly striving for
documentary-level accuracy.
