I expect that Dracula was already a fairly accomplished sorcerer before 
he became a vampire.  He kept his ability to do magic after he was 
turned.  Most of his tricks were things that he could already do while 
still human.  He may have refined his abilities a bit over the centuries.

We saw that Dru's psychic abilities were something she already had as a 
human, though she probably learned the hypnosis thing after she died.
