Don't think anyone was trying to say those were real people.  However,
many of the "bodies" with the "stitches" (the "Y" incision) are the
actual actors.  Sometimes they'll use prosthetics for the "surgery",
or use a dummy if the face won't be seen too long or too closely.
Otherwise, it's the actor in the role, with makeup and prosthetics.
