I don't recall seeing the inside of the coffin when Willie opened it so
how 
do we know the cross wasn't there?
(It wasn't even Jonathan Frid's hand around Willie's neck.)

We saw the coffin in 1967 (not 1966) first.  If travels to the past
changed 
the present it doesn't matter because we saw the original events first 
before they were changed.  For example, the ghosts of Quentin and Gerard 
now never haunted Colinwood because these events were changed by trips to 
the past.  But we saw them because we saw them BEFORE they were changed by

trips to the past.
