Star Trek has a huge fan base. Highlander has its fans, too, but it's
not nearly as large. "Hot producers" don't want to do charity work,
they want to make money. I cannot see a "hot" producer agreeing to do
Highlander without either a cool new idea, a lot of money, or both.
And as I've pointed out before, successful revamps of the past,
including Battlestar Galactica (early 1980s), Bionic Womans (1970s),
and yes, Star Trek (originally 1960s, then 1980s, now 2000s) typically
wait at least 20 years.
