Why?
Most Earth societies and religions allow for legal killing under
select conditions, whether it's war, execution of major criminals,
trial by combat, dueling, or vengeance. For example, note that the
Biblical book of Numbers, considered holy by both Jews and Christians,
legalizes vengeance (see chapter 35) under some conditions. Even
full-scale wars are acceptable in the most modern Western societies if
there is sufficient cause. Dueling is now mostly illegal and
unacceptable, but was socially acceptable, tolerated, and even legal
in many countries until relatively recently.
So most societies outlaw casual murder, but still historically allow
or allowed killing under certain conditions. The immortals are a
secret society that has existed for millenia. So why is it "evil" for
their secret society to establish its own dueling rules and kill each
other per those rules? For much of the immortals' more recent
existence, mortal dueling would have been explicitly tolerated or even
legal in much of Europe and the Americas. To longer-lived immortals,
our newfound squeamishness might seem odd, like a passing fad.
