It's a very ambitious project.
Is this still about the sets? If so, have you considered fini****ng
your shooting with a generic set or green screen? You can always add
the cockpit and other details in post, as CG. The longer you wait to
finish shooting, the more likely an actor won't be available or will
physically change in appearance. It's a no-lose approach -- if the
sets become available before you find someone to do the post work, and
the actors are still available, you can just reshoot the scenes with
the sets.
Meanwhile, it's probably a lot easier to find someone who can edit
video (can be anywhere in the world) than someone who can build sets
(ideally needs to be physically nearby.)
