I think this is one of those "purposefully forgotten" character details. 
If they had "remembered" that Ethel was a good piano player earlier on, 
the storyline(s) where she needed to be bad at it wouldn't work...so 
they forgot!

In a similar vein, I've always thought it funny that Ethel's middle name 
changed so frequently...but this I chalk up to actual forgetfulness on 
the writers' parts.
