The color or the fruit or its juice have been seen often in props
since the very beginning of the series. Jin's friend even told him
that "love will look...orange." The Locke incident has been mentioned
as a reference to Vito Corleone in "The Godfather," but there are
many, many other occurrences, like Clementine's name. In "Something
Nice Back Home," for example, Jack picks up Kate's orange panties off
the floor, and there are oranges in a bowl in the kitchen. In other
episodes, Richard gives Juliet spiked o.j., Hurley makes a killing in
orange futures, and Jack makes himself a screwdriver.
My personal theory is that it refers to the concept of the "navel of
the world." In Season 1, there is even an original musical segment
called "Navel Gazing," probably a reference to Sawyer's line to Kate:
"You some sort of no fun, navel-gazing, mopey type?"
