That's what I do to watch my .avis of MST3K, it works pretty well. If I
had a copy of Road House, I'd probably use MacTheRipper to rip it to
unencrypted VOBs, then use MPEG Streamclip to convert to DV and do the
synchronizing with iMovie. I did a similar project to make a highlights
reel of McBain from the Simpsons. It was pretty labor intensive, but
then again that was a lot of cutting and pasting. RiffTraxing Road House
would probably be easier because it would be one continuous video. Maybe
it's time to rent Road House and give it a shot!
